3 large zucchinis
1 large onion (or a couple of small), chopped
2 large tomatos (chopped)
2 tablespoons rice
¼ cup olive oil
1 cup water
1 teaspoon sugar
1 teaspoon salt
Dill, chopped (optional)
Garlic and Yogurt sauce (optional)
- Wash the Zucchinis and clean them using a scraping tool or a fork for a nice design on the outside the Zucchini. Here is a picture of the tool.
- Put olive oil in a pot
- Add onions and stir fry them until they are soft
- Add rest of the ingredients (except dill)
- Bring to boil.
- Cover and reduce heat to medium. Cook for 20 – 25 minutes until zucchini is soft.
- Serve cold/room temperature.
- Add chopped dill before serving
